These muffins are to die for and sooo healthy, really healthy. I know… the white chocolate chips… Ok, there are the tiny ones and you could say that they are there mostly for decoration and to give you a little taste of chocolate. The muffins are so filling (oats and apple do that for you) that you kind of forget to crave for more chocolate. Seriously!
But feel free to add some extra white chocolate chips in the batter!

Super healthy apple and white chocolate chips muffins
1 cup oat bran
1 cup fat free yogurt
2 3/4 cups peeled and diced apple
2 eggs ( or 3 whites)
1/4 cup fat free milk
2 tbs canola oil
1 tsp vanilla
3/4 cup whole wheat flour
3/4 cup all purpose flour
2/3 cup brown sugar (I use 1/3 cup brown sugar and 1/3 cup Splenda)
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1/4 cup mini white chocolate chips
Pre heat oven to 375F.
Combine the oat bran and yogurt and let stand for 5 to 10 min. Combine the eggs, milk, vanilla and oil in a separate bowl and add to the yogurt mix.
Stir all the dry ingredients together. Combine the dry and wet mixtures, stirring gently and add the apples and some of the extra chocolate chips if you are adding it. Do not over mix.
Spoon the batter into greased muffins tins. Bake for 15 and without turning the oven off, remove the muffins from the oven and sprinkle the chocolate chips on top of them. Return them to the oven for 5 to 10 more min, or until the tops are brown.
