“Must try” fall meat loaf


This meat loaf original recipe was called “Mom’s best meat loaf”. I found it in an edition of “Taste of home” many years ago and I’ve been making it since. It is one of our favorite fall – winter meal, with never any left overs. I used to make mashed potatoes and gravy with it, just so perfect! But lately, being on the healthy and diabetes friendly side, I’ve been replacing it with mashed sweet potatoes and no gravy. I must say it is even better, so light, comforting and filling! It has to be baked for one hour but it takes less than 10 min. to put it together.

4 to 6 portions

1 cup milk
1 egg lightly beaten
3/4 cup light bread crumbs (I use Panko)
1 cup chopped onions
1 tbs ketchup
1 1/2 tsp salt
1 tsp horseradish
1 tsp sugar
1 tsp allspice
1 tsp dill weed
1 1/2 lb lean ground beef ( I normally use extra lean)

Additional ketchup

Pre heat the oven at 350F.
In a bowl add all the ingredients but the ground beef and mix it well. Add the ground beef to this mixture and press it into a ungreased loaf pan.
Bake for 1 hour. Take it out of the oven, drizzle some ketchup on top and bake for 15 min more or until the meat temperature reads 160F.
