I am always looking into having a variety of muffin recipes for our snack in the evening. The criteria is simple, tasty and healthy. I found this recipe in the last edition of Canada’s Style at home magazine.
Apples, cinnamon, oats and brown sugar… Can’t go wrong with these, no need to feel guilty. They really tasted great with my green tea.
Healthy apple muffins
1 cup quick rolling oats
1 cup fat free yogurt
2 cups peeled and diced apple
2 eggs ( or 3 whites)
1/4 cup fat free milk
2 tbs canola oil
1 ts vanilla
3/4 whole wheat flour
3/4 all purpose flour
2/3 brown sugar
1 1/2 tsp baking soda and 1 1/2 baking powder
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
3/4 cup chopped dried apricots or cranberries
Pre heat oven to 375F. Combine the oats and yogurt and let stand for 5 to 10 min.
Combine the apple, eggs, milk, vanilla and oil in a separate bowl. Add the apple mix to the yogurt mix and stir to blend.
Add all other dry ingredients together, pour the yogurt mix over it and add the apricots or cranberries. Stir gently, just to combine and spoon the mixture into greased muffins tins.
Bake for 15 to 20 min, until the tops are brown.
