All Bran Apple Cranberry Muffin

I bake these diabetes friendly muffins for evening snacks or a quick breakfast.They turn out moist and light. If you are not serving the whole batch right away, a good idea is to freeze them. They thaw very quickly.

All Bran Apple Cranberry Muffin

1 1/2 cup of All Bran
1 cup of milk
1 cup of baking flour or light whole wheat flour
1 1/2 cup of brown sugar ( I used 1 cup of Splenda and 1/2 cup of brown sugar)
4 tsp of baking powder
1 tsp of cinnamon
1/2 tsp each nutmeg and salt
2 eggs
1/4 canola oil
3/4 cup frozen cranberries ( do not thaw)
3/4 cup unpeeled apples

Pre heat the oven at 400F.

Combine cereal and milk and let it soak for 2 min.

Combine flour, sugar, baking powder, cinnamon , nutmeg and salt.

Beat eggs and oil into the cereal mix and add it to the dry ingredients, stirring only until just combined.

Fold in cranberries and apples, pour in 12 muffins tins and bake for 20 min.
